A Fresh and Healthy Light Bite for Summer
These Caprese Bites include not one, but TWO ingredients that are in peak season and even more delicious than usual! A recipe that I once named ‘Tomato, Mozzarella, and Basil with Balsamic Reduction’ (I know, very creative), has now been rebranded as Caprese Bites! As I mentioned in last week’s blog, produce is seasonal, with certain items being “in season,” ripe, and full of flavor during specific months. Regardless of the name, this is seriously THE appetizer of the summer, especially when hosting. Nonetheless, Caprese bites are a quick and easy appetizer perfect for summer hosting and outdoor entertainment.
With just 3 ingredients and no cooking required, these bites are a delicious, low-effort starter sure to please any crowd! Basil, creamy mozzarella layered a ripe tomato slice, with a drizzle of sweet and tangy balsamic reduction… these bites will truly melt in your mouth. Caprese Bites
Ingredients
- 2 lbs ripe tomatoes cut into 1/4 inch slices
- 8 oz fresh mozarella, packed in water cut into ¼ inch slices
- 1 bunch fresh basil leaves
- Balsamic reduction
- Kosher salt and freshly ground black pepper to taste
Instructions
- Arrange tomatoes on a large serving platter. Layer basil and mozzarella. Drizzle with balsamic glaze. Season with salt and pepper.
- Serve immediately and enjoy!
Notes
- Use a serrated knife to slice tomatoes.
- For convenience, use pre-sliced, fresh mozzarella, packed in water.
