Most tailgates menu selections you will certainly find meats, breads, and cheeses, but rarely anything green (unless your team colors are green…we see you Baylor Bears). A Hearty Game Day Salad drizzled with a lemon dressing offers great flavors that satisfies the need for greens and your taste buds. This recipe is a great way to add plant-based proteins and fiber to your menu. Boost your protein by adding grilled chicken, beef, or shrimp!

Hearty Game Day Salad
Ingredients
Hearty Game Day Salad
- 2 Cups Chopped Kale
- 2 Cups Broccoli Slaw
- ½ Cup Garbanzo Beans, drained and rinsed
- ½ Cup Cooked Quinoa, cooled
- 2 Tbsp Dried Cherries or Craisins
- ¼ Cup Pumpkin Seeds
- ⅓ Cup Crumbled Feta Cheese
Lemon Dressing
- ¼ Cup Lemon Juice
- ¼ Cup Olive Oil
- 2 Cloves Garlic, chopped
- ½ Tsp Salt
- ¼ Tsp Pepper
- 1 Tsp Oregano
- 1 Tsp Agave Nectar
Instructions
Hearty Game Day Salad
- In a large mixing bowl combine kale, broccoli saw, garbanzo beans, quinoa, cherries, and pumpkin seeds.
- Serve with lemon dressing and top with crumbled feta.
Lemon Dressing
- In a small bowl, combine all ingredients. Whisk and serve.
