An Easy and Refreshing Summertime Salad
What do fruits and fashion have in common? They both have seasons! Just as denim shorts and sandals are ‘in season’ throughout the summer, so is my favorite fruit – watermelon! This fruit is so juicy and ripe during the summer months, which, if you ask me, calls for a recipe with watermelon as the hero. Introducing my Watermelon, Arugula, and Goat Cheese Salad!
This recipe combines my favorite ingredients to create a refreshing summertime salad that I like to make all season. Ripe seedless watermelon, fresh arugula, creamy goat cheese, toasted almonds, and red onion all topped with the subtle tang of a Champagne vinaigrette… YUM! I love serving it as a side to any grilled items. It also makes a great main entree with added protein like chicken, fish, or shrimp. This recipe is easy and delicious with the perfect balance of flavors. Whether you’re hosting a group or preparing dinner for the family, this salad is a certified crowd-pleaser!

Watermelon, Arugula, and Goat Cheese Salad
Ingredients
- 1 5oz container arugula
- 3 cups seedless watermelon, cut into bite-sized pieces
- ½ cup red onion thinly sliced
- ½ cup crumbled goat cheese
- ¼ cup sliced almonds toasted
- champagne vinaigrette
Instructions
- In a large bowl combine greens, watermelon, red onion, goat cheese and sliced almonds. Gently toss and serve with champagne vinaigrette.
Notes
- While store bought vinaigrette is certainly an option, I love making my own vinaigrette using this bottle.
- If the arugula is a bit too much of a peppery bite, you can opt for a combination of spinach and arugula or mixed greens.
- I prefer seedless watermelon for ease and flavor.
