Watermelon, Arugula, and Goat Cheese Salad
A light and refreshing salad that will be on repeat all summer long!

Ingredients

5oz
container arugula
3
cups
seedless watermelon, cut into bite-sized pieces
½
cup
red onion
thinly sliced
½
cup
crumbled goat cheese
¼
cup
sliced almonds
toasted
champagne vinaigrette
Instructions
In a large bowl combine greens, watermelon, red onion, goat cheese and sliced almonds. Gently toss and serve with champagne vinaigrette.

TIFFY’S TIPS
While commercial vinaigrette is certainly an option, I love making my own vinaigrette using
this bottle
.
If the arugula is a bit too much of a peppery bite, you can opt for a combination of spinach and arugula or mixed greens.
I prefer seedless watermelon for ease and flavor.
