Skewered Shrimp Shooters

This recipe is perfect for ringing in the New Year. It’s pretty, festive and so flavorful! I try offering a variety of recipes on my blog that are quick and easy, minimal ingredients, nutritious, with a splurge here and there. I recall my high school home economics teacher referring to a recipe that could be a “dump and stir”, which means add ingredients, stir and voilà! I am referring to today’s Skewered Shrimp Shooters recipe as an “assembly only”.  If you have the ingredients on hand, simply prep, assemble and serve! It’s super easy and the flavors are so fabulous! Skewered Shrimp Shooters 

Makes 8 appetizers 

Ingredients

8 pieces Manchego cheese, cubed 

8 pieces salami, thinly sliced

8 medium cooked shrimp, shelled with tails on

2 cups Fire Roasted Tomato Basil Soup, heated  

8 thinly sliced crostini, toasted  

Italian parsley, chopped  

Kosher salt and freshly ground black pepper, to taste

Instructions

Arrange cheese, salami and shrimp on each bamboo skewer.  

Pour 2-ounces of soup in the bottom of each martini glass.

Position shrimp skewer in the glass.

Garnish with crostini round, parsley, salt and pepper.

Tiffy’s Tips 

~You can use any tomato base soup, I just love my recipe.  

~Soup can be warm but not hot. Remember…the idea is to shoot the soup and chase with the appetizer OR dip the skewer ingredients and/or crostini.  

~Create your own skewer, olives, a variety of cheeses, meatballs, pepperoncini, etc…

~Select any type of semi-hard cheese you would like.  

~Use larger shot glasses or small martini glasses.
