I love soup! Soup is so flavorful with each recipe offering unique, complex and often very simple cooking methods. I developed this Mixed Up Tortilla Soup recipe after I purchased my Vitamix years ago and have tweaked a bit from time to time. If you don’t own a Vitamix (I highly suggest) you can use an electric blender. One of the fabulous features on the Vitamix is a setting for hot soup. As the ingredients process, the mixture heats and it’s ready to eat after processing. Of course, you can warm your creation stovetop or microwave, but I love this simple feature. Enjoy!!
Mixed Up Tortilla Soup
Serves 4
Ingredients
5 baby carrots
1 stalk celery, halved
1 clove garlic
1 Roma tomato, seeds and ribs removed, quartered
½ tbsp cilantro
1 tsp Kosher salt
3 black peppercorns
1 tbsp cashews
1 teaspoon fresh lemon juice
1 cup hot chicken broth
3 baby spinach leaves
1 cup corn tortilla chips
Instructions
Place carrots and next 9 ingredients into the container of an electric blender, firmly secure lid. Blend on HIGH 1 minute or until ingredients are processed, and pureed. Add spinach and tortilla chips. Pulse ingredients until chopped and incorporated. Serve warm with your favorite toppings.
Kitchen Tips
~I often double or triple this recipe to have throughout the week.
~If using a Vitamix, you’ll know the recipe is ready when you see steam rising from the vented lid.
~Top with rotisserie chicken or cooked and cubed chicken breast.
