If you’re hosting Christmas dinner this year there’s no need to get your tinsel in a tangle… I’ve got the perfect entrée to add to the menu! Christmas is just over a week away, making it the perfect time to share my tried and true Holiday Beef Tenderloin recipe (pssst… you might remember seeing it in the November 2022 issue of Austin Fit Magazine). This delicious and fool-proof recipe is a follower-favorite of mine that will make for a truly unforgettable Christmas dinner!

Around the holidays there never seems to be enough time in the day. Juggling gift shopping, holiday parties, and out of town guests leaves little time (and sanity) to prepare a labor intensive Christmas dinner. This beef tenderloin is one of my go-to dinner party recipes. With minimal ingredients and steps, you can create a perfectly done tenderloin that’s packed with incredible flavor. Grab your meat thermometer and let’s get this holiday meal started!

Holiday Beef Tenderloin

Servings 8 Servings

Ingredients

  • 3 lbs tenderloin roast
  • 1 tbs olive oil
  • cup greek seasoning
  • cup coarse ground black pepper

Instructions

  • Heat oven to 425° F. In a small bowl combine Greek seasoning and black pepper. Slightly rub the roast with olive oil. Roll roast in seasoning mixture to cover all surfaces. 
  • Place roast on a rack in a shallow roasting pan. Insert an ovenproof meat thermometer so the tip is centered in the thickest part of the beef. Do not add water or cover. 
  • Roast in the oven for 35-45 minutes or until desired internal temperature is reached. Remove from the oven. Transfer roast to carving board; tent loosely with aluminum foil. Allow the roast to rest for 15-20 minutes. Slice and serve.

    We ordered a tenderloin for Christmas, but also love their incredible summer sausage, ground beef, sirloins, etc.
