- I love to serve the chicken over a bed of this rice. I sauté the rice with chicken broth, red onions, and a bit of parmesan cheese for a delicious and clean meal. However, this recipe is very basic and can be served many ways.
- Serve in a wrap, on a salad, add to scrambled eggs, tacos, top a baked potato, stuffing for chicken enchiladas, or add to chicken nachos. The options are endless!
- This recipe is perfect to make in bulk and freeze.
- Adjust the spices to your preference or use your favorite spice mix.
- When preparing food in a crockpot, make sure you add 1 cup of liquid.
- I just replaced my slow cooker after 26 years (yes, it’s older than my daughter). Make sure to follow your manufacturer’s instructions for timing recommendations.
- I’ve made this recipe with frozen chicken breasts, (yes, I forgot to thaw) just adjust the cooking time.
