I love to serve the chicken over a bed of this rice. I sauté the rice with chicken broth, red onions, and a bit of parmesan cheese for a delicious and clean meal. However, this recipe is very basic and can be served many ways.
Serve in a wrap, on a salad, add to scrambled eggs, tacos, top a baked potato, stuffing for chicken enchiladas, or add to chicken nachos. The options are endless!
