I love discovering the culinary arts, discovering new flavors and cooking methods. I was so excited attend Taco Academy at Las Ventanas al Paraíso!! The Taqueria at the Oasis Pool was where I landed with Chef Ben for my Taco Academy class. I learned about local ingredients, authentic cooking equipment, how to make salsas, tacos, quesadillas, sopes and so much more.
Chef Ben and I focused on two mainstay salsas; roja and verde…red and green. We prepped local, fresh ingredients for both salsas. Moved the ingredients to an incredibly hot griddle and charred to perfection. The cooking time was about 20-25 minutes. We then transferred all ingredients to molcajetes.
A molcajete is a large mortar and pestle made from volcanic stone used to prepare Mexican food, particularly salsas. Think of the molcajete as a prehistoric blender or food processor. I have a molcajete at home and plan to dust it off and use to make salsas at home! Lot’s of grinding for the perfect consistency! The red salsa was on the sweeter side as the Roma tomatoes were so ripe and super sweet. The green salsa has a tart flavor and as we added sea salt, the better the flavor! We made fresh guacamole in a molcajete with a bit of lime and sea salt. That’s all!!! We topped with pico de gallo, grilled corn and cilantro!! The chips!!! The chips in Cabo are AMAZING!!!
