The Easy & Refreshing Salad I’ll Have on Repeat This Summer!

It feels like summer here in Texas! This time of year I find myself craving dishes that are light, refreshing, and easy. More specifically, I can’t get enough of easy summer salads! I’m of the mindset that salads don’t have to be bland or boring. Especially when there are such great in-season ingredients to take advantage of. With that being said, allow me to introduce your newest summer craving… Watermelon, Arugula, and Goat Cheese Salad!
This refreshing Watermelon, Arugula, and Goat Cheese Salad was truly made for hot summer days. It’s easily made with just a few simple ingredients, and strikes the perfect balance of tangy and sweet. Ripe seedless watermelon, fresh arugula, crumbled goat cheese, toasted almonds, and red onion topped with the subtle Champagne vinaigrette… YUM! It’s the perfect side to any array of grilled items, and can even be served as a main entree with added protein.
Not only is it beyond delicious, but it seriously takes minutes to throw together. Psst… this is why it’s one of my go-to summer hosting recipes. It looks and tastes impressive but couldn’t be more simple! It’s the kind of recipe that will have your guests coming back for seconds (and thirds)! Try this refreshing watermelon salad once and I can almost guarantee you’ll have it on repeat all summer long. Watermelon, Arugula, and Goat Cheese Salad
Ingredients
- 1 5oz container arugula
- 3 cups seedless watermelon, cut into bite-sized pieces
- ½ cup red onion thinly sliced
- ½ cup crumbled goat cheese
- ¼ cup sliced almonds toasted
- champagne vinaigrette
Instructions
- In a large bowl combine greens, watermelon, red onion, goat cheese and sliced almonds. Gently toss and serve with champagne vinaigrette.
Notes
- While commercial vinaigrette is certainly an option, I love making my own vinaigrette using this bottle.
- If the arugula is a bit too much of a peppery bite, you can opt for a combination of spinach and arugula or mixed greens.
- I prefer seedless watermelon for ease and flavor.
