As the temperatures rise, we’ll certainly want to cool down… especially in the form of a sweet summer treat! One thing that pairs perfectly with a hot summer day? Ice cream! Introducing my Ice Cream with Spiked Berries—a seasonally appropriate and flavorful take on traditional vanilla bean ice cream. If you’re looking for a dessert that’s slightly different from the norm, yet still easy to make… look no further!

Summer is the season of berries, so it only makes sense that they’re the star of this easy summer dessert! These perfectly ripe berries, soaked in a rich amaretto mixture, sit atop a bed of velvety vanilla ice cream for a refreshing, indulgent (and unexpected) warm-weather treat.
What I love most about this simple summer dessert is that it feels elevated, but is still incredibly easy to make. Ice Cream with Spiked Berries
Ingredients
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 2 tsps granulated sugar, or to taste
- 1 tsp honey or to taste
- ¼ cup amaretto liqueur, divided
- 1 pint vanilla bean ice cream
- ¼ cup toasted almonds, sliced
- fresh mint, to garnish
Instructions
- In a medium-size bowl, combine blueberries, raspberries, and blackberries. Add sugar, honey and 1 tablespoon amaretto. Gently toss to coat, cover and refrigerate for up to 24 hours.
- Add scoops of vanilla bean ice cream to individual serving dishes. Evenly drizzle remaining amaretto on ice cream. Top with berries and almonds. Garnish with mint and serve immediately.
Notes
- In a recipe, “divided” means an ingredient will be used in portions at different stages, rather than all at once. For this recipe, the amaretto liqueur is “divided” and thus used in two separate steps.

- When serving a crowd, save time pre-scooping ice cream and place on a baking sheet lined with parchment paper; freeze. When time to serve, simply place ice cream scoops in individual serving dishe.
