In a medium-size bowl, combine blueberries, raspberries, and blackberries. Add sugar, honey and 1 tablespoon amaretto. Gently toss to coat, cover and refrigerate for up to 24 hours.
Add scoops of vanilla bean ice cream to individual serving dishes. Evenly drizzle remaining amaretto on ice cream. Top with berries and almonds. Garnish with mint and serve immediately.
Notes

When serving a crowd, save time pre-scooping ice cream and place on a baking sheet lined with parchment paper; freeze. When time to serve, simply place ice cream scoops in individual serving dishe.
