I look forward to fall recipes all year long and cannot wait for the day I can start pulling out my favorite cozy soup, stew, and chili recipes. The minute I sense a slight chill in the air, I race to the grocery store (or the Amazon grocery section) and gather the ingredients for my go-to easy beef chili recipe. Very few things scream fall like a cozy bowl of hearty beef chili. For as long as I can remember, I’ve prepared my beef chili recipe on Halloween. It’s a hearty and delicious way to say goodbye to October and hello to November!

This easy beef chili recipe is a family favorite passed down by my fabulous mother. I’ve tweaked a few things through the years, but at its core, it’s still the same fabulous fall recipe box staple. Using lean ground beef, fresh vegetables, dried spices, and more, this recipe is savory, delicious, and always a crowd-pleaser. One of the things I love most about this beef chili is how versatile and simple it is to make. No matter what your chili preference is, this recipe can be adjusted to your liking. The blend of spices gives it a deep, rich flavor, while the slow simmering process allows all the ingredients to meld together beautifully. Plus, it’s the perfect make-ahead dish, ideal for busy fall evenings or a post-trick-or-treating warm-up!

Delicious Beef Chili

This is the only beef chili recipe you’ll ever need! Hearty, flavorful, and oh-so easy to make.

Chili Mix (Yields approximately 3 tablespoon)

  • Brown 2 pounds of ground beef, onions, and bell pepper in a large saute pan. Add tomato sauce, tomatoes, beer, and broth. Stir in chili mix.
  • Transfer to a crockpot and cook for 8 hours on low or according to your manufacturer's instructions. Add kidney beans for the last 30 minutes of cooking time. You can also use a Dutch oven, just adjust the cooking time to 2 hours, covered with a li

Tiffy’s Tips
  • I prefer to use my crockpot for this recipe, however you can prepare stove top in a Dutch oven.
  • This recipe freezes extremely well, simply store the leftovers in a freezer safe container, then thaw and reheat at a later date.
  • Adjust the spices to your preference.
  • Store any leftover Chili Mix in this spice container.
  • The Chili Mix can be used to season soups, stews, or meats.
  • Enjoy chili by itself, as a topping on hot dogs, baked potatoes, eggs, etc.,
  • It’s always a battle of beans or no beans. I enjoy adding kidney beans, black beans, or pinto beans but it’s certainly a personal preference. Always drain and rinse canned beans.
  • I love spice, so for me… the spicier the better! I substitute canned tomatoes and green chilies for the fire roasted tomatoes. SO good and adds a bit of a kick.
