A Flavorful 7-Ingredient Dinner with Minimal Prep

We all have those busy days when the last thing we want to do is figure out what’s for dinner! That’s why I love having a few easy, make-ahead weeknight dinner ideas in my back pocket, and this easy crockpot brisket recipe is one I turn to time and time again. With just a handful of simple ingredients and a crockpot, you can have a delicious, flavor-packed dinner waiting for you at the end of the day. The secret is in the sofrito! While I love making mine from scratch, a fabulous store-bought option works just as well when time is limited.
One of my favorite things about this recipe is how versatile it is. Serve it as brisket sliders for dinner, use the leftovers for breakfast tacos, or even make it for your next tailgate. It’s the perfect easy crockpot dinner for weekly meal prep, giving you plenty of ways to enjoy a delicious meal without spending hours in the kitchen. Trust me, this is one recipe you’ll want to keep on repeat!

Easy Crockpot Brisket
Ingredients
- 3 lbs beef brisket, flat cut
- 2 tsp Kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp chili powder
- 4 cloves garlic, minced
- 12 oz jar Sofrito
- ½ cup water
Instructions
- Season brisket on both sides with salt, pepper, and chili powder.
- Place brisket fat side up in a crockpot. Top with minced garlic. Pour sofrito and water over brisket. Cover and cook on LOW for 8-10 hours, or according to your appliance manufacturer's instructions.
- Brisket should be fork-tender. Shred brisket with two forks mixing with the cooking sauce. Serve.
Notes
- You can make homemade sofrito or this is a great option!
- I prefer using a crockpot but have had wonderful results using an Instant Pot pressure cooker. Another great option is using a Dutch Oven either on the stovetop or in the oven.
- The brisket is a beef cut that requires low heat and a longer cooking time to ensure tenderness. Though not a ‘quick’ recipe, it couldn’t be easier.
- The serving options are seriously endless. My family loves making this recipe into sliders and tacos. You can also serve on top of a baked potato, a wrap, in enchiladas, or for breakfast with eggs.
- This recipe freezes well, so I recommend storing leftovers in a freezer safe container and pulling out to serve at a later date.
- If you don’t have minced garlic on hand, you can use dried minced garlic as an alternative. Conversion is as follows: 1 fresh garlic clove, minced to ½ teaspoon dried, minced garlic.
