A High Protein, Make Ahead Breakfast for Busy Mornings

“Breakfast is the most important meal of the day”… a phrase we’ve all heard hundreds of times! While this is true, sometimes a well-rounded breakfast ends up on the back burner due to busy mornings and extensive to-do lists. As we continue to kick off the new year, I thought I’d share my favorite make-ahead breakfast recipe… Healthy Breakfast Turkey Muffins! This recipe is quick to prep, easy to enjoy, and a protein-packed option for even the most hectic of mornings. Prepare at the beginning of the week, store, then pop in the microwave to enjoy!
These healthy Breakfast Turkey Muffins have been a family favorite since my daughter was in middle school, and she still loves them to this day! The great thing about these muffins is how simple and satisfying they are. Made with just a handful of wholesome ingredients, they deliver a perfect balance of protein and flavor in every bite. Their grab-and-go convenience makes them a lifesaver for busy mornings, ensuring you start your day with a nourishing meal (without the hassle). Whether you’re enjoying them fresh out of the oven or reheating them on a hectic morning, these Breakfast Turkey Muffins are sure to become a staple in your kitchen!

Breakfast Turkey Muffins
Ingredients
- 1 Lb. 99% lean ground turkey
- 3 egg whites, beaten
- 1 cup quick-cooking oats, uncooked
- 1 1.5 oz package meatloaf seasoning mix
- ½ tsp Kosher salt
- ½ tsp coarse ground black pepper
- 1 10 oz can can diced tomatoes & green chilies, drained
- ½ cup chopped onion
- ½ cup chopped bell pepper
- Non-stick cooking spray
Instructions
- Preheat oven to 350°
- In a medium sized bowl, gently mix turkey, egg whites, oats, meatloaf seasoning mix, salt, and pepper. Add diced tomatoes & green chilies, onion and bell pepper, and mix thoroughly.
- Gently form into balls the size of a racquetball, approximately 3 ounces. Place in a regular-size muffin pan sprayed with non-stick cooking spray.
- Bake for 35-40 minutes, or until the internal temperature reaches 160°.
Notes
- Add 1 Tbsp. fresh cilantro for added flavor.
- Add chopped garlic for added flavor.
- When mixing the ingredients and forming the muffins I like to use these disposable food-safe cooking gloves.
- Make sure not over mix as this creates a tough turkey muffin.
- I love to serve turkey muffins with ketchup!
- You can line the muffin tin with reusable muffin liners for easy clean-up.
- Store in an air-tight container in the refrigerator. Reheat in the microwave on high for 45 seconds.
