New year, same desire to eat healthy and nourish my body! As we close out the holiday season and ring in 2024, I’m looking forward to getting back into my clean eating habits. While I tend to gravitate towards the same few recipes, I love adding a bit of variation in our weekly dinner menu. This week I thought I would switch things up and share a few recipes I love from different creators! I’ve hand selected eight quick, easy, and healthy recipes that will help you kickstart the year on a healthy note… four this week and four next week!

RECIPE #1: TURKEY MUFFINS

These have been a staple of mine for years! These protein packed muffins are a game changer, especially on the days that I don’t have the time to cook a well-rounded breakfast from scratch. 

RECIPE #2: FILET MIGNON SKEWERS WITH CHIMICHURRI

It is no secret that I love getting protein in at every meal! These skewers are both protein and flavor packed. I love this chimichurri sauce and have even doubled it to add to roasted veggies throughout the week. 

RECIPE #3: CHICKEN STIR FRY

Not only quick and easy to prepare, but absolutely delicious! I use this recipe as an outline but will use whatever veggies I have on hand and I plate it over rice.

RECIPE #4: STUFFED PEPPERS

You can never go wrong with stuffed peppers, they’re such a fun and unique option! The bell peppers retain their shape and preserve the filling’s freshness, making this meal perfect for preparing ahead and enjoying throughout the week.
