It’s officially the time of year that I find myself craving dishes that are light, refreshing, and easy. More specifically, I cannot get enough of a refreshing summer salad! I’m of the mindset that salads don’t have to be bland or boring, especially when there are so many incredible in season ingredients to take advantage of. With that being said, allow me to introduce your newest summer craving: my Watermelon, Arugula, and Goat Cheese Salad!

This refreshing summer salad was truly made for hot summer days. It comes together with just a handful of simple seasonal ingredients and strikes the perfect balance of tangy and sweet. Ripe seedless watermelon, fresh arugula, crumbled goat cheese, toasted almonds, and red onion are topped with a subtle Champagne vinaigrette… YUM! It pairs beautifully with everything from grilled favorites to summer cookout spreads, and can even be transformed into a satisfying main course with the addition of your favorite protein. This is one of those warm weather recipes I find myself craving on repeat. Whether you’re looking for an easy weekday lunch or planning your summer entertaining menu, this refreshing summer salad is one you’ll be making all season long.

Watermelon, Arugula, and Goat Cheese Salad

A light and refreshing salad that will be on repeat all summer long!

Ingredients

  • 1 5oz container arugula
  • 3 cups seedless watermelon, cut into bite-sized pieces
  • ½ cup red onion thinly sliced
  • ½ cup crumbled goat cheese
  • ¼ cup sliced almonds toasted
  • champagne vinaigrette

Instructions

  • In a large bowl combine greens, watermelon, red onion, goat cheese and sliced almonds. Gently toss and serve with champagne vinaigrette.

Notes

TIFFY’S TIPS
  • While commercial vinaigrette is certainly an option, I love making my own vinaigrette using this bottle.
  • If the arugula is a bit too much of a peppery bite, you can opt for a combination of spinach and arugula or mixed greens.
  • I prefer seedless watermelon for ease and flavor.
