Allow me to introduce you to your new favorite way to cool off, my ice cream with spiked berries. It’s no secret a hot summer day pairs well with ice cream, and this recipe takes the classic pairing one step further for an elevated and refreshing sweet summer treat. Summer is the season of berries, so it only makes sense that they’re the star of this easy summer dessert. The perfectly ripe seasonal berries are soaked in a rich amaretto mixture and placed atop a bed of creamy vanilla ice cream for a refreshing, indulgent (and unexpected) warm-weather treat. Ice Cream with Spiked Berries

A simple and refreshing dessert for the summer season!

Ingredients

  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 2 tsps granulated sugar, or to taste
  • 1 tsp honey or to taste
  • ¼ cup amaretto liqueur, divided
  • 1 pint vanilla bean ice cream
  • ¼ cup toasted almonds, sliced
  • fresh mint, to garnish

Instructions

  • In a medium-size bowl, combine blueberries, raspberries, and blackberries. Add sugar, honey and 1 tablespoon amaretto. Gently toss to coat, cover and refrigerate for up to 24 hours. 
  • Add scoops of vanilla bean ice cream to individual serving dishes. Evenly drizzle remaining amaretto on ice cream. Top with berries and almonds. Garnish with mint and serve immediately.

Notes

TIFFY’S TIPS
  • In a recipe, “divided” means an ingredient will be used in portions at different stages, rather than all at once. For this recipe, the amaretto liqueur is “divided” and thus used in two separate steps.
  • Struggling with firm ice cream? This heated ice cream scoop is a game changer!
  • When serving a crowd, save time pre-scooping ice cream and place on a baking sheet lined with parchment paper; freeze. When time to serve, simply place ice cream scoops in individual serving dishes.
