In a small bowl, whisk together olive oil, vinegar, garlic, oregano, mustard, salt, and pepper.
On a large serving platter, arrange lettuce, cucumber, green pepper, tomatoes, feta, red onion, and olives. Garnish with mint. Serve with dressing.
