Watermelon, Arugula and Goat Cheese Salad

Ingredients

container arugula
3
cups
watermelon
seeded and cubed into bite-sized pieces
¼
small red onion
thinly sliced
½
cup
crumbled goat cheese
¼
cup
sliced almonds
toasted
Champagne vinaigrette
Instructions
In a large bowl combine greens, watermelon, red onion, goat cheese and sliced almonds. Gently toss and serve with champagne vinaigrette.

~I often substitute a blend of arugula and spinach or mixed greens.
